Ingredients
- 4 cups blueberries
- 1/2 cup sugar or substitute
- 1/4 cup corn starch
- 1 teaspoon cinnamon
- lemon zest
- pinch of salt
- 2 pie crusts
- 1 egg yolk
Recipe
- Preheat oven to 375
- Crush 1/2 cup berries into a small saucepan
- Add sugar, cornstarch, cinnamon, zest, salt to saucepan
- Stir and heat until everything dissolves.
- Put berries in one pie crust, pour sauce over, mound a bit in the middle.
- Cut the other crust into strips and lattice the top.
- Brush egg wash onto all the exposed crust.
- Bake at 375 for 20 minutes, turn temp down to 325.
- Bake another 25 minutes, or until golden brown.
Let it stand for a solid half hour or more for the goop to firm up.
