Blueberry Pie

Ingredients

  • 4 cups blueberries
  • 1/2 cup sugar or substitute
  • 1/4 cup corn starch
  • 1 teaspoon cinnamon
  • lemon zest
  • pinch of salt
  • 2 pie crusts
  • 1 egg yolk

Recipe

  • Preheat oven to 375
  • Crush 1/2 cup berries into a small saucepan
  • Add sugar, cornstarch, cinnamon, zest, salt to saucepan
  • Stir and heat until everything dissolves.
  • Put berries in one pie crust, pour sauce over, mound a bit in the middle.
  • Cut the other crust into strips and lattice the top.
  • Brush egg wash onto all the exposed crust.
  • Bake at 375 for 20 minutes, turn temp down to 325.
  • Bake another 25 minutes, or until golden brown.

Let it stand for a solid half hour or more for the goop to firm up.
