Ingredients
- 2 T hummus
- 1/8 pound diced cooked chicken
- 1/4 cup finely chopped kale
- 1/8 cup diced cucumber
- 1/8 cup diced tomato
- 1 tsp red wine vinegar
- 1 T chopped kalamata olives
Directions
Put the hummus and diced chicken in a container in a hot water bath to warm.
Lay the wrap in a hot, dry skillet for 15 - 30 seconds.
Make a greek salad with all the other stuff.
Put the hummus and chicken along the center of the wrap, leaving one end free to fold around the butt end to hold the stuff in.
Put the salad on top. Wrap it up.
Lemon garlic chicken is delicious. Hummus is basically lemon garlic paste. This easy dish makes eating otherwise uninteresting chicken breast a lot more enjoyable.
