  • 2 tsp yeast
  • 2 cups bread flour
  • 1 tsp salt
  • 3/4c water

Nuke water for 30 seconds. Add yeast and a pinch of flour to the water and stir.

Coat a bowl with shortening. Put some flour on a countertop.

Mix flour with salt. Add water/yeast mixture. Mix thoroughly.

Knead for a couple minutes.

Put in bowl, cover with plastic wrap, stick in the microwave to rise for 90 minutes.

When rise is done, set oven to 450. Put in a sheet pan full of water. Put a saucepan full of water on the stove to heat.

Punch down the dough and form it into a loaf shape. Put it on flat surface or in a loaf pan (use parchment).

Cover with a plastic storage box that fits in microwave.

Put it in the microwave and let rise for 30 minutes.

Put the loaf in the oven. Pour the hot water into the pan. Overflow into the bottom of the oven is fine / good.

Bake for 25 minutes.
